Ryan here. Can you believe we have already begun a new school year?! You may be just getting into the swing of a busy schedule again, so I wanted to take a moment and share with you a hack that we use for a quick lunch (or even dinner) that requires pretty much no planning, but is super healthy and simple to make!

This recipe uses our pastured chicken breast. The chicken doesn’t even have to be thawed, as we use an Instapot in this recipe to make for some quick cooking!

I have really enjoyed this tasty lunch many times before, and I’m sure you and your family will too! It’s especially helpful while trying to get back into the swing of a busy schedule again.

Chicken Lunch Wraps

Ingredients:

  • 1-3 pounds pastured chicken breast (frozen works just fine)
  • 1 teaspoon salt
  • 1 cup water or chicken broth
  • your favorite wrap (whole wheat, white, corn tortilla, or coconut wrap)
  • your favorite salad dressing (we like Caesar) or Garlic Aioli sauce (see recipe below)
  • Whatever veggie toppings you have on hand (we like onions, tomatoes and cucumbers)

Step 1: Cook the chicken

Place the chicken in the InstaPot, preferably on a trivet rack if you have one, and pour in the water or broth. Sprinkle the chicken with the salt. Close and seal the lid, set the InstaPot to high pressure, and cook for 10 minutes at high pressure.

Get out your wrap, get any veggies out that you have on hand (slice or dice if needed) and have your salad dressing ready.

Don’t have a good salad dressing? You can also use mayo, but if that sounds too boring, you can quickly whip up a garlic aioli sauce, that will provide the added health benefits of raw garlic!

Garlic Aioli: Simply add the following to a blender.

  • 1/3 cup mayo
  • 1 clove garlic
  • 1/2Tbsp lemon juice
  • ¼ tsp salt
  • 1/8 tsp black pepper

Put the wrap togetherBlend and enjoy this zippy sauce (we often double the recipe).

Step 3: Put it all together!

Take out your chicken and shred or slice it. Place it on your wrap, then top with the veggies and sauce of your choice!

Bam! A QUICK, HEALTHY, and super EASY lunch for you and your family!
